Best Cooking Methods

STEAKHOUSE METHOD 
Best for steaks under 1.5" thick 

  • Preheat the oven to 350° F. Season with salt & pepper or your favorite seasonings.
  • Place a lightly oiled skillet over high heat. Sear the steak for 2min a side.
  • Turn off heat, place steak & skillet in the oven for about 7-8min, checking the temp with meat thermometer at the halfway point.
  • Remove steak from skillet to a cutting board, loosely cover with foil. Let rest for 5-10min & serve.
     

REVERSE-SEAR METHOD
Best for steaks 1.5" thick or more 

  • Preheat the oven to 275° F. Season with salt & pepper or your favorite seasonings.
  • Place steak on a wire rack set on a baking sheet. Place the baking sheet in the oven. Cook until steak reaches your desired internal temperature. See back page of this book for our Meat Temperature Guide. Start checking temperature at around 15min. Total cook time depends on steak size, approx. 20- 60min.
  • Remove steak from oven, loosely cover with foil. Let rest for 5-10min.
  • Add 1 tbsp of neutral oil to a skillet on high heat. Sear on both sides and edges for about 60 seconds until a brown crust forms. Serve.
